The Food Safety Training program (FST) aims to develop and implement a curriculum to fill in the gaps of food safety in food testing laboratories in East and Southern Africa. It addresses food safety principles (food microbiology, sanitation, HACCP, and food defense), lab safety, quality assurance, and validation of test methods, metrics, sampling protocols, management, accreditation, methodologies, data analyses and interpretation, maintenance, and troubleshooting.
A five-week program with the National University of Life and Environmental Sciences designed educate on food science, product development, food microbiology, sanitation, process control, food defense, cereal quality, food mycology, and mycotoxins.
This project’s mission is to prepare students at the Agribusiness Teaching Center (ATC) in Yerevan, Armenia in the management of food safety processes and educate them on food safety principles through the Food Safety Systems Management program.
This program focuses on improving the safety and quality of dairy foods in Ethiopia by building the capacity of Ethiopian academic, government and industry institutions for monitoring the prevalence of foodborne microbiological hazards through food safety training.
Promote the U.S. Food Safety Modernization Act (FSMA) through the Food Safety and Agricultural Sustainability Training program (FAST) program, focused in Latin America. This mission includes evaluating food exports to the United States from countries in the Latin American region, collecting and analyzing data on food safety, and distributing the findings to collaborating organizations.
