Vancie Peacock, a Biological Engineering student, is teaching a 3-credit course called Exploring Sustainability in Local Food Systems (CED 297) this fall semester (2023).
She is the Executive Director of the Student Farm Club, a Student Farm intern, and she established Penn State's first on-campus community vegetable garden.
In this experiential learning-based course, you will explore the local food systems and learn how to be an effective change-maker in your community. Topics of study range from the migrant farm worker rights to Indigenous food systems. You will have the opportunity to learn and practice hands-on regenerative farming at the Student Farm, take a behind-the-scenes tour of Penn State’s Housing and Food Services, visit community gardens and food pantries, take a seed-saving workshop, and more.
No prerequisites are required! You must register in LionPATH.
