They hope to help consumers warm up to crickets as a protein source

To feed 10 billion people by the year 2050, Pasta 2050 hopes to incorporate protein into our diets in a tasty way that is a little unconventional for Western culture.

Pasta 2050 has made pasta using cricket flour. They hope to normalize crickets as a protein source by adding the nearly undetectable ingredient to a common and popular food.

Pasta 2050 is one of five finalists in the Ag Springboard 2017 student business pitch contest. They pitched live before judges April 13, competing to win the $7,500 grand prize.

Team members include food science graduate students (who are also roommates) Weslie Khoo, Haoshu Zhang, and Lauriel Stewart.
