This embedded course helps students develop an understanding and appreciation for the Italian food system.

About the Course

Studying the Italian food system will be treated as a microcosm of Western Europe. Students will compare and contrast food production norms in northern Italy and Pennsylvania .

Prior to the trip, students will be divided into three groups, with each group focusing on a particular segment of the Italian food and/or agricultural system.  Examples of segments might include cheese production to confectionary production/

The class will meet at various points (during the spring semester, followed by a ~2 week tour of northern Italy in May to observe elements of the food system there. Before leaving, each food system group will conduct
